Positively charged chitosan binds to negatively charged fat, bile acids and cholesterol in the intestine and prevents fat absorption. Consumption of chitosan has a beneficial effect by reducing body weight, total cholesterol, low-density lipoprotein cholesterol and glucose and increasing cholesterol excretion. In addition to this, modulation of adipokines by chitosan may be one of the mechanisms for weight loss. It decreases dietary intake which is associated with increased serum leptin concentrations.
